Microbiological Analysis

Winemaking is essentially a microbial process which we generally monitor by chemical analysis.

However under certain circumstances useful information can be obtained by performing microbiological analysis .


Monitoring Brettanomyces counts prior to the production of 4-EP/4-EG taint is such a circumstance as is checking sterility of bottling, especially with sweet wines.

It is very important that samples be collected in an aseptic/sterile manner and that sample containers are suitably sterilized prior to use. Please consult us for direction in this important matter.
