WORRIED ABOUT CALCIUM INSTABILITY?

Calcium instability caused by excess calcium in wine can be devastating. Here’s what you need to know:

  • Calcium tartrate is not cold sensitive. This means that a standard 72-hour test at 4°C is unlikely to precipitate calcium tartrate and indicate an instability.
  • Standard cold stabilisation treatments, including CMC, polyaspartate and mannoproteins, are unlikely to prevent the formation of calcium tartrate.
